Faites-y chauffer la gousse d&rsquo;ail \u00e9cras\u00e9e et les deux filets d&rsquo;anchois \u00e0 feu tr\u00e8s doux. \u00c0 l&rsquo;aide d&rsquo;une cuill\u00e8re en bois, \u00e9crasez doucement les anchois jusqu&rsquo;\u00e0 ce qu&rsquo;ils fondent compl\u00e8tement dans l&rsquo;huile chaude.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">3. Le mijotage de la sauce<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Ajoutez dans la po\u00eale le m\u00e9lange d&rsquo;olives, le thon \u00e9miett\u00e9 et les c\u00e2pres. Remuez une minute, puis versez les 500 g de coulis de tomates. Assaisonnez avec une belle pinc\u00e9e d&rsquo;origan et quelques tours de moulin de poivre noir.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p class=\"wp-block-paragraph\">\ud83d\udca1 <strong>L&rsquo;astuce du chef :<\/strong> Ne rajoutez surtout pas de sel \u00e0 ce stade ! Les anchois et les c\u00e2pres apportent d\u00e9j\u00e0 toute la sapidit\u00e9 n\u00e9cessaire \u00e0 la sauce. Laissez mijoter le tout \u00e0 feu doux pendant 15 minutes pour que les saveurs se confondent.<\/p>\n<\/blockquote>\n\n\n\n<h3 class=\"wp-block-heading\">4. La cuisson des Penne<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Pendant que la sauce r\u00e9duit, plongez vos Penne dans une grande casserole d&rsquo;eau bouillante sal\u00e9e. Veillez \u00e0 les cuire <em>al dente<\/em> (r\u00e9f\u00e9rez-vous au temps de cuisson de nos p\u00e2tes artisanales Mancini ou Rummo).<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">5. Le dressage<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">\u00c9gouttez les p\u00e2tes et versez-les directement dans la po\u00eale contenant la sauce calabraise.
