Leur nom vient du latin \u00ab nepitedum \u00bb, qui d\u00e9signe les paupi\u00e8res : leur forme en demi-lune rappelle un \u0153il ferm\u00e9, comme un clin d\u2019\u0153il discret \u00e0 la tradition familiale.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sous une p\u00e2te d\u00e9licate se cache une farce riche et g\u00e9n\u00e9reuse : <strong>noix<\/strong>, <strong>amandes<\/strong>, <strong>figues s\u00e9ch\u00e9es<\/strong>, <strong>raisins secs<\/strong>, <strong>miel<\/strong>, <strong>confiture de griottes<\/strong>, \u00e9pices chaudes et <strong>chocolat noir<\/strong>. On l\u2019\u00e9tale finement, on d\u00e9coupe des disques, puis on les garnit d\u2019une cuiller\u00e9e de farce aux fruits secs, cacao, \u00e9pices, rhum (ou liqueur La Strega) et confiture de griottes. Les disques sont referm\u00e9s en demi-lune, scell\u00e9s \u00e0 la fourchette, dor\u00e9s \u00e0 l\u2019\u0153uf puis cuits au four jusqu\u2019\u00e0 ce qu\u2019ils prennent une belle couleur ambr\u00e9e.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les <strong>nepitelle<\/strong> ont un autre atout : elles se conservent longtemps. Leur nom myst\u00e9rieux vient du latin <em>nepitedum<\/em>, qui signifie \u00ab paupi\u00e8res \u00bb. La P\u00e2te Bris\u00e9e Douce<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Sur votre plan de travail, formez un volcan (un puits) avec la farine et le sucre. Au centre, d\u00e9posez deux \u0153ufs, le beurre pr\u00e9alablement ramolli et coup\u00e9 en d\u00e9s, ainsi que la levure. P\u00e9trissez le tout avec \u00e9nergie jusqu&rsquo;\u00e0 l&rsquo;obtention d&rsquo;une p\u00e2te bien lisse et homog\u00e8ne. \u00c0 l&rsquo;aide d&rsquo;un rouleau \u00e0 p\u00e2tisserie, \u00e9talez la p\u00e2te finement, puis d\u00e9coupez des cercles de la taille d&rsquo;une sous-tasse \u00e0 caf\u00e9.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">2. La Farce Gourmande<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Plongez d&rsquo;abord vos raisins secs dans un bol d&rsquo;eau ti\u00e8de pour les faire ramollir. Dans votre robot, mixez ensemble les noix, les amandes, les figues s\u00e9ch\u00e9es et votre tablette de chocolat noir Venchi. Versez ce m\u00e9lange textur\u00e9 dans un grand saladier, puis ajoutez-y les raisins secs \u00e9goutt\u00e9s, le cacao en poudre, la cannelle, les clous de girofle, les zestes d\u2019orange, le demi-verre de rhum, la confiture de griotte et le miel. M\u00e9langez bien \u00e0 la cuill\u00e8re : vous devez obtenir une farce bien ferme, dense et brillante.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">3. Le Fa\u00e7onnage des \u00ab\u00a0Paupi\u00e8res\u00a0\u00bb<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">S\u00e9parez le blanc du jaune de votre troisi\u00e8me \u0153uf. \u00c0 l&rsquo;aide d&rsquo;un pinceau, \u00e9talez un peu de blanc d&rsquo;\u0153uf sur tout le pourtour de vos cercles de p\u00e2te (cela servira de colle naturelle). D\u00e9posez une belle cuill\u00e8re de farce au milieu de chaque cercle. Repliez la p\u00e2te sur elle-m\u00eame pour former une demi-lune. Pressez fermement les bords avec vos doigts, puis marquez-les \u00e0 l&rsquo;aide des dents d&rsquo;une fourchette pour garantir l&rsquo;\u00e9tanch\u00e9it\u00e9 et donner un joli motif traditionnel.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">4. La Cuisson<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Battez le jaune d&rsquo;\u0153uf restant avec un pinceau et badigeonnez-en la surface de chaque <em>nepitella<\/em> pour leur donner une belle brillance. Disposez-les sur une plaque de cuisson recouverte de papier sulfuris\u00e9. Enfournez pour 30 minutes dans un four pr\u00e9chauff\u00e9 \u00e0 200\u00b0C. Surveillez bien : elles doivent arborer une magnifique robe dor\u00e9e. Laissez-les enti\u00e8rement refroidir avant de les manipuler et de les servir.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">\ud83d\udca1 Le Conseil Insolite de l&rsquo;Esprit Mezzogiorno<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">La cuisine du Sud est vivante et chaque famille poss\u00e8de son secret !
