Pourquoi le ros\u00e9 est\u2011il si particulier ?<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>\u00ab Le processus de production des vins ros\u00e9s se situe \u00e0 mi\u2011chemin entre le blanc et le rouge. \u00bb<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le ros\u00e9 n\u2019est pas un m\u00e9lange de blanc et de rouge (ce qui est interdit en Italie).<br>C\u2019est un vin \u00e0 part enti\u00e8re, avec sa propre identit\u00e9.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>\ud83d\udfe9<\/strong><strong> 2. Comment produit\u2011on un vin ros\u00e9 ?<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>\u00c9tape 1 : le choix des raisins<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Trois m\u00e9thodes existent :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>raisins rouges peu color\u00e9s,<\/li>\n\n\n\n<li>m\u00e9lange majoritairement blanc + petite part de rouge,<\/li>\n\n\n\n<li>raisins rouges classiques mais mac\u00e9ration tr\u00e8s courte.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>\u00c9tape 2 : la mac\u00e9ration courte<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">C\u2019est l\u2019\u00e9tape cl\u00e9.<br>Les peaux restent en contact avec le mo\u00fbt <strong>quelques heures seulement<\/strong>, juste assez pour transmettre :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>couleur,<\/li>\n\n\n\n<li>ar\u00f4mes,<\/li>\n\n\n\n<li>l\u00e9gers tanins.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>\u00ab Les raisins rouges sont \u00e9cras\u00e9s, laissant les peaux mac\u00e9rer juste assez pour que le vin prenne la couleur souhait\u00e9e. \u00bb<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>\u00c9tape 3 : soutirage &amp; fermentation<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Une fois la couleur obtenue, on s\u00e9pare le jus des peaux.<br>La fermentation se fait ensuite en cuves inox pour pr\u00e9server la fra\u00eecheur.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>\u00c9tape 4 : clarification &amp; mise en bouteille<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le vin repose, se clarifie, puis est filtr\u00e9 et mis en bouteille.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>\ud83d\udfe9<\/strong><strong> 3.
