Ici, le <strong>piment calabrais (peperoncino)<\/strong> est roi : \nfrais, s\u00e9ch\u00e9 ou infus\u00e9 dans l\u2019huile, il devient l\u2019\u00e2me br\u00fblante de chaque recette.\n<\/p>\n\n<p>\nProduit embl\u00e9matique de la r\u00e9gion, la <strong>\u2019Nduja<\/strong> \u2013 saucisse tartinable au piment rouge vif \u2013 \napporte une texture fondante et un piquant g\u00e9n\u00e9reux aux p\u00e2tes, sauces et bruschette. \n\u00c0 ses c\u00f4t\u00e9s, les charcuteries comme la <strong>Soppressata<\/strong> et les fromages artisanaux tels que \nle <strong>Caciocavallo Silano<\/strong> ou le <strong>Pecorino<\/strong> incarnent la richesse pastorale de l\u2019int\u00e9rieur des terres.\n<\/p>\n\n<p>\nEntre mer et montagne, la Calabre offre une diversit\u00e9 unique : <strong>espadon, anchois, thon<\/strong> et \nfruits de mer sur les c\u00f4tes ; <strong>aubergines, pois chiches, tomates s\u00e9ch\u00e9es, oignons rouges de Tropea<\/strong> \ndans l\u2019arri\u00e8re-pays.
