Pourtant, derri\u00e8re cette proximit\u00e9 culinaire \u00e9vidente se cache une histoire complexe, \nfaite d\u2019admiration, d\u2019\u00e9changes\u2026 mais aussi de pr\u00e9jug\u00e9s et de violences.  \nL\u2019immigration italienne, massive entre le XIX<sup>e<\/sup> et le XX<sup>e<\/sup> si\u00e8cle, a profond\u00e9ment \ntransform\u00e9 la cuisine fran\u00e7aise, tout en exposant les Italiens \u00e0 un racisme quotidien o\u00f9 la \n<strong>nourriture devenait un outil de stigmatisation<\/strong>.\n<\/p>\n\n<p>\nComme le montre l\u2019\u00e9tude de Daniele Zappal\u00e0, les relations gastronomiques franco-italiennes \nreposent sur un double mouvement :  \n<strong>les Fran\u00e7ais ont int\u00e9gr\u00e9 la cuisine italienne<\/strong>, et les Italiens ont adopt\u00e9 certains codes \nfran\u00e7ais. Mais ce rapprochement s\u2019est construit dans un contexte social parfois hostile, o\u00f9 \nl\u2019Italien \u00e9tait r\u00e9duit au clich\u00e9 du <em>macaroni<\/em>, symbole d\u2019une alt\u00e9rit\u00e9 m\u00e9pris\u00e9e.\n<\/p>\n\n<h3>1. Avant l\u2019immigration : une fascination fran\u00e7aise pour l\u2019Italie culinaire<\/h3>\n\n<p>\nD\u00e8s la Renaissance, la cuisine italienne appara\u00eet en France comme un exotisme de cour.  \nLes r\u00e9cits de voyages, les spectacles italiens et la Commedia dell\u2019Arte introduisent les \npremiers \u00e9l\u00e9ments culinaires transalpins : p\u00e2tes, fromages, desserts, gestes culinaires.  \nMais il ne s\u2019agit encore que d\u2019une <strong>mise en sc\u00e8ne aristocratique<\/strong>.\n<\/p>\n\n<h3>2. La grande immigration italienne (1880\u20131950) : quand la cuisine devient identit\u00e9<\/h3>\n\n<p>\nAvec l\u2019arriv\u00e9e massive des Italiens du Nord (Pi\u00e9mont, Lombardie, V\u00e9n\u00e9tie), la cuisine italienne \nentre r\u00e9ellement dans le quotidien fran\u00e7ais.  \nDans les quartiers ouvriers de Marseille, Lyon ou Paris, les commerces \u00ab Produits d\u2019Italie \u00bb \ndeviennent des rep\u00e8res communautaires.  \nLes Italiens mangent <strong>riz, polenta, p\u00e2tes<\/strong> : une cuisine simple, \u00e9conomique, qui choque parfois \nles observateurs fran\u00e7ais.\n<\/p>\n\n<p>\nMais cette visibilit\u00e9 culinaire devient aussi un pr\u00e9texte \u00e0 la haine.  \nLes Italiens sont insult\u00e9s de <strong>\u00ab macaroni \u00bb<\/strong>, terme p\u00e9joratif qui r\u00e9duit une population enti\u00e8re \n\u00e0 un aliment.  \nLa nourriture devient un outil de racisme :  \n<strong>\u00ab tu ne manges que des macaronis \u00bb<\/strong> = tu es pauvre, \u00e9tranger, inf\u00e9rieur.\n<\/p>\n\n<p>\nCette violence culmine lors d\u2019\u00e9pisodes tragiques comme les \u00e9meutes anti-italiennes d\u2019Aigues-Mortes \n(1893), o\u00f9 des ouvriers transalpins sont lynch\u00e9s.  \nLa cuisine italienne, pourtant inoffensive, devient un marqueur identitaire utilis\u00e9 pour exclure.\n<\/p>\n\n<h3>3. De la stigmatisation \u00e0 l\u2019adoption : comment la cuisine italienne a conquis la France<\/h3>\n\n<p>\nAu fil des d\u00e9cennies, les Fran\u00e7ais apprennent \u00e0 conna\u00eetre les saveurs italiennes :  \n<strong>p\u00e2tes, pizza, charcuteries, fromages, sauces, antipasti<\/strong>.  \nLes restaurants italiens se multiplient, la pizzeria devient un lieu populaire, accessible, \nsymbole d\u2019une Italie chaleureuse et familiale.\n<\/p>\n\n<p>\nLes Trente Glorieuses acc\u00e9l\u00e8rent ce mouvement :  \nle tourisme de masse en Italie, la m\u00e9diatisation de la cuisine, les films franco-italiens, \nles publicit\u00e9s alimentaires\u2026  \nTout contribue \u00e0 transformer la cuisine italienne en <strong>cuisine du voyage, du naturel, du soleil<\/strong>.\n<\/p>\n\n<h3>4. Une influence profonde sur la gastronomie fran\u00e7aise<\/h3>\n\n<p>\nAujourd\u2019hui, la cuisine italienne est per\u00e7ue en France comme :\n<\/p>\n\n<ul>\n  <li><strong>une cuisine du mouvement<\/strong> (voyage, paysages, terroirs),<\/li>\n  <li><strong>une cuisine du naturel<\/strong> (simplicit\u00e9, produits bruts, saisonnalit\u00e9),<\/li>\n  <li><strong>une cuisine compl\u00e9mentaire de la cuisine fran\u00e7aise<\/strong>.<\/li>\n<\/ul>\n\n<p>\nLes Italiens ont apport\u00e9 :\n<\/p>\n\n<ul>\n  <li>la culture des p\u00e2tes,<\/li>\n  <li>la pizza,<\/li>\n  <li>les charcuteries (pancetta, coppa, guanciale),<\/li>\n  <li>les fromages (mozzarella, parmesan, pecorino),<\/li>\n  <li>les sauces simples (tomate, basilic, ail),<\/li>\n  <li>le go\u00fbt du produit avant la technique.<\/li>\n<\/ul>\n\n<p>\nCe qui \u00e9tait autrefois moqu\u00e9 est devenu un pilier de la table fran\u00e7aise.\n<\/p>\n\n<h3>5. L\u2019envers du d\u00e9cor : quand la gastronomie r\u00e9v\u00e8le le racisme<\/h3>\n\n<p>\nL\u2019histoire rappelle que la cuisine italienne n\u2019a pas \u00e9t\u00e9 accueillie avec enthousiasme d\u00e8s le \nd\u00e9but.  \nLe terme <strong>\u00ab macaroni \u00bb<\/strong> a longtemps \u00e9t\u00e9 une insulte raciste.  \nLa nourriture servait \u00e0 hi\u00e9rarchiser, \u00e0 exclure, \u00e0 ridiculiser.  \nMais c\u2019est pr\u00e9cis\u00e9ment cette cuisine, simple et populaire, qui a fini par conqu\u00e9rir la France.\n<\/p>\n\n<p>\nAujourd\u2019hui, la gastronomie italienne est c\u00e9l\u00e9br\u00e9e, mais il est essentiel de se souvenir que \nson int\u00e9gration est le fruit d\u2019un long combat social, culturel et humain.\n<\/p>\n\n<h3>6. Une compl\u00e9mentarit\u00e9 franco-italienne unique en Europe<\/h3>\n\n<p>\nLa France et l\u2019Italie sont d\u00e9sormais alli\u00e9es dans la d\u00e9fense :\n<\/p>\n\n<ul>\n  <li>des produits de qualit\u00e9,<\/li>\n  <li>des appellations d\u2019origine,<\/li>\n  <li>de la culture du go\u00fbt,<\/li>\n  <li>de la lutte contre la contrefa\u00e7on alimentaire.<\/li>\n<\/ul>\n\n<p>\nDeux cuisines diff\u00e9rentes, mais deux cuisines s\u0153urs, respect\u00e9es dans le monde entier.\n<\/p>\n\n\n\n\n<figure class=\"wp-block-gallery has-nested-images columns-default is-cropped
