Issu exclusivement de la longe du <strong>Maiale Nero d\u2019Aspromonte<\/strong>, une race rustique \u00e9lev\u00e9e en libert\u00e9 et nourrie de glands, ch\u00e2taignes et herbes sauvages, ce filet se distingue par son liser\u00e9 de gras g\u00e9n\u00e9reux et naturel. Ce gras noble prot\u00e8ge la viande durant l\u2019affinage et lui conf\u00e8re une tendret\u00e9 incomparable.<\/p>\n\n<p>Pr\u00e9par\u00e9 selon un savoir\u2011faire ancestral, le Filetto est d\u2019abord mis en saumure puis <strong>mass\u00e9 \u00e0 la main<\/strong> pendant plusieurs jours avec du sel, du poivre noir, du fenouil sauvage et une touche de vin. Suit une maturation lente de <strong>4 \u00e0 6 mois<\/strong>, accompagn\u00e9e d\u2019un l\u00e9ger fumage naturel au laurier et au romarin, qui lui donne un parfum d\u00e9licat, bois\u00e9 et profond\u00e9ment m\u00e9diterran\u00e9en.<\/p>\n\n<p>Un produit 100% pur porc noir, sans colorants, sans gluten, sans lactose et sans OGM.
