Les premi\u00e8res traces de sa fabrication remontent \u00e0 <strong>1291<\/strong>. \u00c0 l&rsquo;origine, les armaillis (les bergers des alpages) fabriquaient ces meules gigantesques (qui peuvent peser jusqu&rsquo;\u00e0 100 kg \u00e0 l&rsquo;\u00e9tat complet) pour une raison tr\u00e8s pratique : conserver le lait abondant de l&rsquo;\u00e9t\u00e9 pour pouvoir se nourrir durant les longs mois d&rsquo;hiver isol\u00e9s dans les montagnes.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Le myst\u00e8re des trous (Les boutonni\u00e8res)<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Contrairement aux id\u00e9es re\u00e7ues, ce n&rsquo;est pas une machine qui fabrique les trous de l&rsquo;Emmentaler, mais la nature. Lors de l&rsquo;affinage en cave chaude, la fermentation naturelle du lait de foin produit du gaz carbonique. La cro\u00fbte du fromage \u00e9tant tellement dense et herm\u00e9tique, ce gaz ne peut pas s&rsquo;\u00e9chapper.
