N\u00e9 d&rsquo;une mauvaise interpr\u00e9tation de ses r\u00e9cits de voyage et amplifi\u00e9 \u00e0 des fins promotionnelles en 1938 par le <em>Journal des Macaroni<\/em> am\u00e9ricain, ce conte de f\u00e9es occulte une r\u00e9alit\u00e9 bien plus fascinante.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">L\u2019histoire des p\u00e2tes en Italie est le fruit d\u2019un m\u00e9tissage culturel exceptionnel, s\u2019\u00e9tendant sur des mill\u00e9naires. Des populations antiques du bassin m\u00e9diterran\u00e9en jusqu\u2019aux sch\u00e9mas politiques du XXe si\u00e8cle, d\u00e9couvrez comment ce glucide universel est devenu le pilier culturel et gastronomique du <em>Mezzogiorno<\/em> et de toute la p\u00e9ninsule. En regardant une simple nouille, c&rsquo;est l&rsquo;histoire enti\u00e8re de la civilisation que l&rsquo;on contemple !<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\ud83c\udfdb\ufe0f Les Origines : De la M\u00e9sopotamie \u00e0 l&rsquo;Empire Romain<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">L&rsquo;amour du grain ne date pas d&rsquo;hier. Il y a environ 10 000 ans, la M\u00e9sopotamie \u2014 entre le Tigre et l\u2019Euphrate \u2014 voyait na\u00eetre l\u2019agriculture organis\u00e9e et la culture du bl\u00e9. Des tablettes d\u2019argile sum\u00e9riennes datant de 2000 av. J.-C., retrouv\u00e9es \u00e0 Lagash et Uruk, mentionnent d\u00e9j\u00e0 des mets fabriqu\u00e9s \u00e0 partir de farine et d\u2019eau.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">En Italie, ce sont les \u00c9trusques (du VIIIe au IIIe si\u00e8cle av. J.-C.) qui s&rsquo;imposent comme des pionniers. Les fresques de leurs banquets grav\u00e9es dans les tombes de Tarquinia, notamment la c\u00e9l\u00e8bre <em>Tombe des L\u00e9opards<\/em>, r\u00e9v\u00e8lent l&rsquo;utilisation d&rsquo;ustensiles culinaires destin\u00e9s \u00e0 travailler la p\u00e2te. On y consommait des <em>lagana<\/em>, de larges bandes de p\u00e2te plates et rudimentaires cuites \u00e0 l&rsquo;eau ou au four, que l&rsquo;on consid\u00e8re aujourd&rsquo;hui comme les anc\u00eatres directes de nos lasagnes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les Romains ont par la suite adopt\u00e9 et perfectionn\u00e9 cet h\u00e9ritage. Le c\u00e9l\u00e8bre ouvrage gastronomique <em>De Re Coquinaria<\/em> d\u2019Apicius mentionne plusieurs recettes de ces <em>lagana<\/em> superpos\u00e9es avec des garnitures de viande ou de poisson. \u00c0 cette \u00e9poque pr\u00e9romaine et romaine, ces bandes de bl\u00e9 ou d&rsquo;\u00e9peautre \u00e9taient principalement consomm\u00e9es fra\u00eeches et restaient un mets d&rsquo;exception souvent r\u00e9serv\u00e9 aux \u00e9lites. Les mots grecs et \u00e9trusques comme <em>l\u00e1ganon<\/em>, <em>mak\u00e1ria<\/em> ou <em>makar\u1e53nia<\/em> donneront naissance, des si\u00e8cles plus tard, aux termes \u00ab lasagne \u00bb et \u00ab macaroni \u00bb.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\ud83c\udf0a Le Moyen \u00c0ge : L\u2019Influence Arabe et l&rsquo;Invention de la P\u00e2te S\u00e8che<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Entre le IIe et le Ve si\u00e8cle apr\u00e8s J.-C., les marchands juifs amorcent une petite r\u00e9volution en important les premi\u00e8res p\u00e2tes s\u00e8ches en Sicile et dans le Sud de l&rsquo;Italie, appr\u00e9ci\u00e9es pour leur conservation \u00e0 longue dur\u00e9e. Mais la culture italienne des p\u00e2tes ne serait pas ce qu&rsquo;elle est aujourd&rsquo;hui sans les conqu\u00e9rants musulmans qui ont gouvern\u00e9 la Sicile entre les IXe et XIe si\u00e8cles.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ce sont eux qui ont introduit le bl\u00e9 dur (<em>Triticum durum<\/em>), une c\u00e9r\u00e9ale robuste parfaitement adapt\u00e9e au climat m\u00e9diterran\u00e9en, id\u00e9ale pour la fabrication de p\u00e2tes s\u00e8ches capables de conserver leur texture apr\u00e8s cuisson. Ils apportent \u00e9galement une forme de p\u00e2te appel\u00e9e <em>itriyya<\/em>, anc\u00eatre direct du spaghetti. Le g\u00e9ographe al-Idrisi d\u00e9crit d&rsquo;ailleurs d\u00e8s 1154 la ville de Trabia, en Sicile, comme un immense centre de production de p\u00e2tes s\u00e8ches export\u00e9es dans tout le bassin m\u00e9diterran\u00e9en.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">C\u2019est \u00e0 cette \u00e9poque m\u00e9di\u00e9vale que na\u00eet une invention typiquement italienne : la cuisson des p\u00e2tes par \u00e9bullition dans l&rsquo;eau ou le bouillon (auparavant, elles \u00e9taient principalement cuites au four directement dans leur sauce). Cette innovation donne naissance aux premi\u00e8res p\u00e2tes perfor\u00e9es comme les <em>penne<\/em>, <em>bucatini<\/em> ou <em>rigatoni<\/em>. C&rsquo;est aussi au Moyen \u00c2ge que se g\u00e9n\u00e9ralise l\u2019usage de la fourchette pour consommer les p\u00e2tes et que les premi\u00e8res corporations de fabricants de p\u00e2tes voient le jour sous le contr\u00f4le rigide des papes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pendant que la Ligurie et le Sud se sp\u00e9cialisent dans le bl\u00e9 dur et le s\u00e9chage, le Nord voit l&rsquo;essor des p\u00e2tes fra\u00eeches aux \u0153ufs, offrant une texture plus douce et un go\u00fbt plus riche. De l\u00e0 naissent les <em>ravioli<\/em>, <em>tortellini<\/em> et autres <em>agnolotti<\/em>. Les Alsaciens adopteront plus tard cette m\u00e9thode pour cr\u00e9er les <em>nudeln<\/em>, terme qui donnera naissance au mot \u00ab nouille \u00bb.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\ud83c\udf45 L&rsquo;Arriv\u00e9e de la Tomate et l&rsquo;Unification Italienne<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Il faudra attendre les XVIe et XVIIe si\u00e8cles pour que la tomate arrive d&rsquo;Am\u00e9rique en Europe. Initialement utilis\u00e9e comme plante ornementale par l&rsquo;aristocratie fran\u00e7aise qui la croyait toxique, elle n&rsquo;entre r\u00e9guli\u00e8rement dans les cuisines italiennes qu&rsquo;au XVIIIe si\u00e8cle. Ce mariage entre la tomate, l&rsquo;huile d&rsquo;olive, l&rsquo;ail, le basilic et les p\u00e2tes change \u00e0 jamais le visage de la gastronomie italienne, donnant naissance au <em>rag\u00f9<\/em>, \u00e0 l&rsquo;<em>amatriciana<\/em> et aux p\u00e2tes au <em>pomodoro<\/em>.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">\ud83e\udd4a La Dr\u00f4le de \u00ab Guerre des Macaronis \u00bb<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Vers 1840, l&rsquo;\u00e9crivain fran\u00e7ais Alexandre Dumas demande au compositeur (et immense gourmet) Gioacchino Rossini sa recette des macaronis <em>alla napoletana<\/em>. Rossini l&rsquo;invite chez lui \u00e0 Bologne pour les d\u00e9guster. Mais Rossini avait revisit\u00e9 la recette originale en y ajoutant des truffes d&rsquo;Acqualagna (une pr\u00e9paration complexe de plus de 4 heures !). Dumas, outr\u00e9 de ne pas recevoir la recette \u00ab\u00a0authentique\u00a0\u00bb promise, quitte les lieux furieux. Les deux g\u00e9nies ne se parleront plus pendant 30 ans, s&rsquo;affrontant \u00e0 coups de critiques acerbes dans les journaux !<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">\ud83c\uddee\ud83c\uddf9 Des P\u00e2tes Politiques et Antifascistes<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">En 1861, lors de la proclamation du Royaume d&rsquo;Italie, les dirigeants font face \u00e0 un d\u00e9fi : unir des peuples aux dialectes et traditions radicalement diff\u00e9rents. C&rsquo;est par la nourriture, et notamment gr\u00e2ce \u00e0 l&rsquo;ouvrage national de Pellegrino Artusi, que l&rsquo;identit\u00e9 italienne se cimente autour des p\u00e2tes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Plus tard, sous le r\u00e9gime fasciste, Benito Mussolini tente de r\u00e9duire la consommation de p\u00e2tes, car l&rsquo;Italie n&rsquo;en produit pas assez pour couvrir ses besoins. De concert avec le po\u00e8te futuriste Marinetti (auteur du <em>Manifeste de la Cuisine Futuriste<\/em> et de son chapitre \u00ab Contre les p\u00e2tes ! \u00bb), il tente d&rsquo;imposer le riz, jug\u00e9 plus nationaliste et viril. La population r\u00e9plique par l&rsquo;ironie : les opposants font des p\u00e2tes un symbole de r\u00e9sistance politique, cr\u00e9ant les traditionnelles <em>pastascuittas<\/em> antifascistes qui se c\u00e9l\u00e8brent encore aujourd&rsquo;hui.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le r\u00e9gime est tomb\u00e9, mais les p\u00e2tes sont rest\u00e9es.
