Cuisson des p\u00e2tes<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Pendant ce temps, faites cuire vos spaghettis dans une grande casserole d&rsquo;eau bouillante sal\u00e9e. Veillez \u00e0 les garder bien <em>al dente<\/em>. <strong>Important :<\/strong> retirez vos p\u00e2tes avec un \u00e9cumoire, ainsi on conserve l&rsquo;eau de cuisson des p\u00e2tes. Voici pourquoi cette technique est parfaite pour la recette :<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Une sauce qui enrobe, qui ne coule pas :<\/strong> C&rsquo;est ce qui permet d&rsquo;obtenir une texture velout\u00e9e et nappante sans ajouter de cr\u00e8me ni de mati\u00e8re grasse superflue, en restant dans l&rsquo;esprit d&rsquo;une cuisine sicilienne l\u00e9g\u00e8re et moderne.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Z\u00e9ro gaspillage de l&rsquo;or liquide :<\/strong> En laissant l&rsquo;eau dans la casserole, vous en avez toujours \u00e0 disposition pour d\u00e9tendre la sauce au thon si elle r\u00e9duit trop.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Plus d&rsquo;amidon transf\u00e9r\u00e9 :<\/strong> En \u00e9gouttant moins les spaghettis, l&rsquo;eau d&rsquo;amidon qui colle encore aux p\u00e2tes se m\u00e9lange directement \u00e0 l&rsquo;huile d&rsquo;olive et au jus des tomates Roma. Cela cr\u00e9e une \u00e9mulsion naturelle.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">5. L&rsquo;assemblage (<em>La Mantecatura<\/em>)<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Versez les spaghettis \u00e9goutt\u00e9s directement dans la sauteuse contenant le thon et les tomates. Ajoutez un filet d&rsquo;eau de cuisson r\u00e9serv\u00e9 pour lier l&rsquo;amidon des p\u00e2tes \u00e0 la sauce. Remuez \u00e9nergiquement sur le feu pendant 1 minute pour que les spaghettis accrochent parfaitement la mati\u00e8re.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">6.
